Chef’s Recipe – Watermelon Gazpacho

This is a deliciously refreshing soup full of flavorful summer flavors!

1/4 watermelon, roughly chopped

28 oz. can whole peeled tomatoes

2 cups V8 juice

Combine above ingredients in a blender until smooth. Pour into a large bowl.

In a small bowl, mix together:

2 Tablespoons lime juice (freshly squeezed is best)

2 Tablespoons orange juice (freshly squeezes is best)

2 Tablespoons honey

Blend well and add to mixture in large bowl.

Add following ingredients to the large bowl:

1 English cucumber, peeled, seeded and cut in small dice

1/4 watermelon, cut in small dice

1-2 green onions, finely diced

2 Tablespoons mint, finely minced

Salt and pepper to taste

Stir gently to combine all ingredients. Refrigerate at least two hours, but preferably overnight to allow flavors to meld and soup to chill.

Spoon into individual serving bowls. Garnish with mint leaves and/or a small dollop of sour cream or crème fraiche. Serve well chilled.
