Members and guests of The Women of Quail Creek (TWOQC) received an insider’s view of the coffee industry at their July program. Anna Perreira, CEO and Founder of Yellow Brick Coffee (YBC), taught the gathering about the differences and subtleties of Specialty Coffees. Explaining how YBC sources and develops roasting profiles for each of its coffees, Perreira shared her thoughts about the tastes she experiences from different coffee beans. She provided samples of three of YBC’s current offerings and helped the audience understand what they might taste from each one.

Yellow Brick Coffee, which supplies some of the coffee available at the Quail Creek Coffee Bar, was started in 2012 after Perreira followed her passion for coffee and trained in roasting under some of the most well-regarded specialty roasters in the U.S. She and her brother David, co-owner of YBC, have traveled to nine different countries to work with coffee farmers and identify beans they regard as best for their product line.

In response to audience questions, Perreira shared tips for getting the best from your coffee. Some of those tips included: don’t refrigerate your beans but store them in sealed but vented coffee bags, grind your beans shortly before brewing your coffee and use a burr grinder to insure greater uniformity of the grind.
